Pressed Salad

This fresh, pressed salad was refreshing and delicious. Last week, in anticipation of the good weather to come, and the sun sneaking into our week, I was feeling like I needed to incorporate more salads into our dinner repertoire.  Now that we're in Florida, that salad nagging is coming strong.

I decided to make a pressed salad from Alicia Silverstone's book with a bit of hesitation because I didn't know what to expect.  Massage my salad you say?!?  Purposefully make it...mushy?!?

Well, I was very pleasantly surprised!

Supposedly pressed salad is easier to digest than regular old salad...makes sense I guess.  Either way it's pretty tasty and something a little different.

I made mine with savoy cabbage, radish (I love radishes), gala apples, scallions, pine nuts (added these at the end so they retained their crunch), brown rice vinegar, and umeboshi vinegar.

Was so yum.  Maybe I'll make another today!  Thinking something lemony as it's so hot here...
