Oatmeal Brulee
Sunday morning rolled around and I just couldn't eat another bagel with tofu (though I probably could have;) the bagel love runs deep). I wanted something different from the usual and remembered seeing a recipe in The Food Network Magazine about an oatmeal souffle. While that sounded delicious, it also sounded a bit overwhelming for breakfast. Then an idea sparked: Oatmeal Brulee!
Here's how I did it:
I cooked the oatmeal according to package directions, but swapped the water for a mix of coconut milk and oat milk. Just before the oatmeal was done cooking, I added 2 tablespoons of maple syrup and 2 teaspoons of cinnamon. (At this step you could really add whatever you like in your oatmeal...I was torn between the cinnamon and blueberries). Then I preheated the broiler. I let the oatmeal finish cooking then spread it into a pyrex pan and sprinkled the top with turbinado raw sugar. I stuck it under the broiler until it started to brown and voila! Oatmeal Brulee!
