Mashed Cauliflower
When I suggested I make some mashed cauliflower to my mom on Monday night she looked at me like I was crazy. Mashed cauliflower? she asked. What's that. Well, I said, it's exactly what it sounds like. "And totally delicious," Liza chimed in from across the lawn. My dad had a similar reaction to my mom. He's never particularly psyched when I cook an entirely vegan friendly and totally healthy dinner.
That said, the cauliflower (and the mushrooms, brown rice, and cabbage for that matter) was received quite well! It's supereasy to make, totally satiating, and a general crowd pleaser. We eat tons of cruciferous veggies around here. They are some of our favorites and cauliflower is pretty high up on the list. Cruciferous veggies help with the body's natural detoxification process, have cancer fighting properties, are loaded with fiber and nutrients and should be included in your daily diet whenever possible.
Here's how I made my mashed cauliflower:
Ingredients:
1 head of cauliflower, leaves removed, chopped into large pieces
1 tablespoon olive oil
3 cloves of chopped garlic
1 tablespoon Earth Balance
a pinch of sea salt
- Using a steamer basket, steam the cauliflower for 10 minutes or until it is very soft.
- In a pot saute the garlic in the olive oil until just starting to brown.
- Add the cauliflower, mix, and mash with a potato masher until it is totally mashed.
- Add the Earth Balance and salt and mix until incorporated.
- Serve hot.
