A Vegan Baking Bonanza

Avital and I made these vegan cupcakes with her friend with non-dairy icing for a birthday. So, by this point you all know that, though I try every once in a while, I'm no kind of baker.  Nonetheless, I've been on a bit of a baking kick this week.  Something's come over me and I'm baking like a madman.  Okay, maybe not like a madman, but at least twice this week!

Wednesday was our babysitter's birthday and a horribly rainy day, so we decided to bake some cupcakes and decorate.  Luckily we had a playdate with Avi's boyfriend, Ike, and a copy of Vegan Cupcakes Take Over The World to experiment from along with a slew of colored sugars and the such in the back of our baking goods cabinet.

I decided on the agave cupcakes (so as to avoid any refined sugars) and substituted the flour for 1/2 whole wheat flour and 1/2 buckwheat flour and they came out perfectly fluffy and delicious.  For the icing, I mixed and matched a few of theirs creating one with agave as sweetener along with raw cacao powder and soy powder.

They came out pretty darn good and about as healthy as you could maybe get with cupcakes (unless I used brown rice syrup, but that's a whole nother ballgame).

Avi thought the decorations for these vegan cupcakes were almost as good as the cupcakes themselves.

Ike's vegan cupcakes were beautifully decorated and eaten just as quickly!
