A Thanksgiving Feast

Even though turkey was not on the menu for Thanksgiving, I found a way to stuff myself silly (and then I did it again with leftovers on Friday and again on Saturday)!

So much of Thanksgiving is vegetarian by nature which makes things really easy.  It's everyone's first reaction to think that Thanksgiving is so hard for vegans because everything is turkey turkey turkey, but almost everything on the side is kosher for us veggies (if you swap the butter for Earth Balance that is).  It's kinda like when I tell people that I'm more okay with eating at steak restaurants than some others and they look at me like I have two heads.  Between all the side dishes they offer, I can make a meal of sauteed broccoli, hash browns, asparagus, and a tomato and onion salad.  (That said I'd never choose to eat at a steak house if it were my choice as I don't like being amongst so much meat, but it's certainly better than a restaurant with no vegetarian options on the menu).

This year we made spinach salad with spiced pecans, brussels sprouts, mashed apple and maple sweet potatoes, homemade cranberry sauce, grandma made apple sauce, homemade 3 mushroom gravy, unstuffed stuffing, and a Field Roast Celebration Roast.

Everything was uh-mazing and of course I ate too much and had a belly ache all night!

We've eaten this spiced pecan spinach salad a number of times and it's elegant and totally vegan.

These vegan apple maple mashed sweet potatoes are my all-time favorite.
