Poof You're A Pumpkin

It's great being a mom and being able to take your kid to do all those fun things you remember doing from your childhood like pumpkin picking! Ok, maybe you're not a pumpkin, but you should seriously consider eating some!  It's fall everyone (a.k.a. my favorite season of the year) and a huge part of the fall feel is pumpkins (and all things pumpkin...read: pies, jack-o-lanterns, picking).

The thing is, pumpkins aren't just good for the soul, their good for the body too!  Pumpkins are chock full of beta carotene and anti-oxidants, vitamins A, C, and E, tons of minerals, salts, EFA's, and more.  You can cook it's flesh into a sweet and rich treat, you can roast it's seeds to create an amazingly healthy, high-in-protein snack, or you can extract it's oil to cook with, add to salads, and in the process, lower your cholesterol.

Best of all, pumpkin and all it's by-products are superdelicious and some of my favorite foods.  Fall is in the air and pumpkin is in my kitchen.

We went pumpkin picking yesterday and I've got a bunch of sugar pumpkins to cook up.  There's something magical about picking out your own pumpkins from those vine-like plants that seem to grow on forever, isn't there?!?  And look at these gorgeous ones I brought home for some festive fall decorations:

These fairytale pumpkins are gorgeous and according to the sign: "Great for Cooking!".  I bet they'd make a beautiful bowl for a vegan soup to be cooked in!

They're actually called fairytale pumpkins (or maybe fairytale squash...either way...)!
