Healthy (and Easy) Dinner

Vegan udon stir fry dinner. Sometimes I just crave something healthy.  Often at times I feel like I don't have enough time in the day to cook a "proper" dinner.  Today was one of those days, so I decided to throw together whatever I could quickly and include kale (I eat kale when I feel like I need something really healthy in my meal...seaveggies do the trick too).

This was my first stab at udon noodles and they came out pretty delicious.  They'd go well with any sauteed vegetables I imagine.  Here I chose portobellos, garlic, and scallions fried in some avocado oil with some salt and shoyu (a type of soy sauce made from fermented soy beans).

The kale dish starts with fried onions in sunflower oil, then chopped kale and salt, adding water to steam as you go.

Richie and Avital were both too busy playing to come to the table when dinner was ready.  I made myself a plate and sat down.  They both made their way into their seats.  Richie (who had a late lunch and was too full for dinner) had two full plates and Avital was seriously upset when I told her that she'd eaten all the noodles and there were no more!
