A Make-Shift Breakfast Perfection
(this post is old...sorry...it was from that day that i could't post because there was no internet at my parents' house...so here it is a bit delayed)
Wednesday night I slept at my parents' house in CT with the plan of leaving Avi to hang with my mom yesterday while I headed up to my father-in-law's camp (Uncle Steve's Camp) for the day.
Of course I not only had a long ride ahead of me (out to the Catskills), but a few errands to run before I hit the road. I got up and dressed, posted my blog, and headed into the kitchen to scour up some breakfast. Cereal and coconut milk were not calling my name and there was no tofu cream cheese or tofu to make one of my usuals. I had to get creative.
I found an avocado, a lemon, some Earth Balance, and peasant bread which would make an amazing open faced sandwich. I cut the bread and popped it in the toaster and while it toasted I headed out to the garden and snagged some yellow cherry tomatoes which tasted like candy!
I piled all my ingredients on top of the toast and enjoyed a superdelicious (and off my regular menu) breakfast which kept me full and energetic through my long ride and first half of the day! And to be honest, I think this is going to be one of my new go-to breakfasts. It was perfectly healthy, rounded, and scrumptious! Paired with a glass of fresh-squeezed orange juice and you've got a supereasy grand slam start to your morning!
